Here are the 2013 Demonstrators

John Fisher, Pastry Chef of Boston Baking, Inc.

Attended Newport Vocational Technical Center in Newport RI with a concentration in culinary arts. Upon graduating John accepted a 2 yr. pastry apprentice opportunity with French Pastry Chef Warren Roberge of La Petite RoBerge. Upon completion of his apprenticeship, John continued his education and training in pastry arts with pastry positions at several local restaurants, hotels, casinos in Connecticut and Rhode Island. In 2006 John became Executive Pastry Chef of A&O Restaurant group located in Newport, RI. In 2007 John Became Executive Pastry Sous Chef of the newly created Twin River Casino in Lincoln, RI. In 2009 John became Executive Pastry Chef for Michelin Trained Chef Rizwan Ahmed’s Hourglass Brasserie at Vanderbilt Hotel in Newport, RI & Hourglass Brasserie in Bristol, RI. Currently John is the Production Manager for Boston Baking Inc.

Christina Mercado, Executive Pastry Chef of Finale

A native New Yorker, Christina Mercado, is the Pastry Chef & Restaurant Manager of Finale HSQ in Massachusetts. Originally hailing from the savory side of the kitchen – Christina changed to the sweeter side of life during her time at the Spiced Pear in Newport, RI; where she began her pastry education both at home and on the job. She received her A.S./B.S. in Culinary Arts and her MBA in Hospitality from Johnson & Wales University in Providence, RI. And it was during that time that she began her travels abroad to places such as Singapore, Thailand and Peru to fine tune her craft & indulge in her passion of international cuisine. It has always been her goal to introduce fun & exotic flavors in her dishes.

Most recently Christina won “Best in Show” – 1st place judge’s choice - for the 6th Annual Home Sweet Home dessert competition in Cambridge, MA. In 2012 her recipes were highlighted in the Regional Showcase of Pastry & Baking North America Magazine, and she competed in the 3rd Annual StarChef’s International Pastry Competition in New York City. Whether competing or creating dishes for diners, Christina believes in using the best ingredients. She is a fan of scouring farmer’s market’s for seasonal produce year-round!

And when she’s not in the kitchen, Christina always finds time for her other passions, which include dance, photography, and art. No matter where she is one day, or 10 years from now – she plans to keep learning & growing – living her life through passion & sharing it with others.

Nicole Coady, Chocolatier of fixx chocolates

A desire to continue learning, combined with a tireless commitment to provide consumers with the ultimate pastry experience, has resulted in Nicole Coady developing into a renowned and celebrated pastry chef. Nicole got her start in the kitchen of a family-owned West Virginia hotel, where visitors repeatedly returned specifically for the young chef’s creations. A graduate of Johnson & Wales, with a degree in culinary and pastry arts, Nicole’s earlier career included working with Corporate Executive Pastry Chef Norman Love and Executive Pastry Chef David Robbins at the Ritz Carlton in Buckhead, Atlanta among others. She joined Finale, the country’s first upscale dessert restaurant, as Executive Pastry Chef in 1998 and was a driving force in building the company’s brand, reputation and innovative menu of gourmet confections. Throughout her career, Nicole and her creations have been featured in various magazines and television shows, including the Food Network, TIME Magazine, Bon Appetit and Town & Country.

Valerie Waters, Chef of Maple’s Organics Desserts

Valerie Waters joined the Maple’s team as the chef and kitchen manager in the summer of 2012. She spent several years in the catering world after graduating with a Culinary Arts degree from SMCC. Following the birth of her son in early 2012, she was ready to start a new culinary adventure. Developing new flavors and taste testing top her list of favorite things at Maple’s.

Catharine Chace, Owner of VCVC Cupcakes

Catharine Chace is a self-taught second-generation baker who grew up following her grandmother’s culinary footsteps in the kitchen. Raised in Cape Cod and now living in Melrose, MA, Catharine turned what was a part time hobby of baking for family and friends into a full time obsession and thus, VCVC Cupcakes was born in 2010.

At an early age, Catharine developed a talent for combining flavors into delectable creations in the kitchen. Finding inspiration from her two young children, she continues to experiment with new ideas and flavors in order to please the palates of her customers whether it is for their birthday party, shower, or wedding. The homemade style and personal touches of her designs truly sets her creations apart from any other.
